Arizona Gambel's Quail

As I stated in an earlier post, I thought my Arizona Gambel’s quail season was over, but with my javelina success opening weekend, the rest of January is looking wide open for my early morning hunts. The quail in my usual spot are getting to the point where they know the sound of my truck, so I opted to try somewhere new.  The brisk winter air offered the perfect weather for a morning walk in a brand new location. Birds were vocal and, after several flushes, held tight which allowed for four birds in the bag. My freezer is looking full and the wife is giving me the look, so it might be time for some bacon wrapped quail or even a new recipe.

    Thanks Bill. It honestly tastes like something out of Boston Market. I really like it. Bacon wrapped with a small clove of garlic, grilled to perfection. Can’t beat it.

    mmmmm bacon. I’d eat just garlic wrapped in bacon by themselves. Quail would just be a bonus!

    I think those days are going to work. I’m working through the logistics with the wife right now. I need to sit down at the vice and hammer out some of those San Juan patterns. I will get you the specifics here shortly. Looking forward to a good time.

    You can send any “extra” bacon wrapped quail to Minnesota. Just freeze it up good and let me know so I can send you the address. Nice work, those feathers look almost as tasty as I imagine the quail to be.

    Will do. I’m sure with your temps there it should still be frozen if I send it regular mail. I really enjoy chasing these quail. Send your address to my email and I’ll see if I can get some of those feathers your way. Tight lines.

    Thats a handful of lovely looking birds Ben. And they sound delicious!
    Have you tried the same thing but using Prosciutto or Jamon instead of bacon and with a little sprig of Thyme? Would be interesting to hear if it changed the dynamic of flavors.

    Sinking into some quail sounds delicious. And congrats on the Javelina hunt. It is nice to see game in plenty out in the desert. Very pretty scenery to boot.
